The grapes for Pascual Toso Estate come from vineyards that are 15 to 25 years old.
Plants are drip irrigated, managing the flow of water for best results.

Pressing. The obtained juice is next submitted to pectolytic enzymes in a controlled atmosphere. Once selected yeasts have been sowed, stainless-steel-tank fermentation at 16°-18° C takes place at a slow and gentle pace.
3-month stainless steel tank aging.
